A handmade Manchego sheep's cheese of medium-mature made exclusively with freshly-milked milk from our own purebred Manchego ewes. Ewes that obtain their food and nutrients from the pastures of ouw own farm that we collect traditionally. A handmade, raw-milk, unpasteurised cheese without additives or preservatives added.

Cheese mature in its own mould, which gives it a unique flavour, and a completely edible natural rind, our handmade Manchego cheese with Certification of Origin, possesses exceptional organoleptic qualitites in which the natural ferments are preserved. This process gives them an unique taste, texture and aroma.
